Product description:Insoluble in water and glycerol, partly soluble in ethanol, good heat resistance and acid-proof alkaline, stable to visible light, but easy to fade under ultraviolet light. Pure of capsicum red pigment is a deep carmine red acicular crystal, soluble in polar organic solvents, and strong inorganic acid blue.
