Product description:Casein acid sodium has the very good foamability, it can be widely used in ice cream and other cold food, to improve the texture and taste. Someone to casein acid sodium, whey and egg white powder found in the research of foamability and when the concentration in the range of 0.5 ~ 8% in the same conditions, the foaming power of casein acid sodium, the largest and the foaming power increases with increasing concentration. But, the foam stability is not as good as egg white powder. The presence of sodium, calcium plasma can reduce its foaming power, but can increase its foam stability.
